In short

The transition to chemical-free agriculture builds directly on traditional farming practices shaped by harsh, long winters and short regional growing seasons. Additionally, farm-to-table initiatives like Alchi Kitchen near Leh and The Balti Farm in Turtuk actively preserve this culinary heritage using local staples.
